Sunday – London Broil with Red Wine Gravy, mashed cauliflower, and  Gluten Free Cheddar Biscuits
Leftover Alert: Cook Extra London Broil. You will tweak it for your Steak Tacos on Tuesday

Monday – Chicken Fried Rice with Egg Drop Soup with Steamed Broccoli tossed in a little garlic chile oil.

Tuesday –  Steak Tacos:  Thinly slice the leftover London Broil and sear in a large pan with my taco seasoning (to taste, depending on how much meat you have) and a little water.  Serve in taco shells with shredded lettuce, chopped tomatoes an Cilantro Cream sauce along side some Vaquero Beans

Wednesday –  Ham Asparagus and Mushroom Strata with a salad.

Thursday –  Gluten Free Chicken Piccata with your favorite Vegetable and Parmesan Mashed Potatoes

Friday –  Gluten Free Crusted Scallops with Mushroom Rice and Garlic Green Beans

Saturday – Easter is Sunday, and many are traveling or already have family get togethers going on.  If not, put on a cozy pot of soup or stew.
