A light golden brown crust on the outside and tender on the inside.   You can adjust the amounts of all seasonings to suit your taste.  To add another dimension to the taste, sprinkle the scallops with Parmesan cheese before serving

Gluten Free Crusted Scallops


  • 1/2 cup Gluten Free all-purpose baking mix (the kind with baking powder in it preferably, like GF Bisquick)
  • 2 tablespoons lemon pepper
  • 1 teaspoon salt
  • 1/2 teaspoon garlic
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 16 sea scallops, rinsed and drained
  • 2 tablespoons olive oil
  • 4 tablespoons chopped fresh parsley
  • 4 teaspoons lemon juice
  • 2 Tablespoons Parmesan Cheese, optional.


  1. In a large bowl, mix together flour, salt, oregano, thyme and lemon pepper.
  2. Roll scallops in flour mixture until lightly coated on all sides.
  3. Heat olive oil in a skillet or frying pan over high heat.
  4. Add the scallops to the pan and sear on all sides (about 2 minutes for each side). Do batches to avoid overcrowding the pan
  5. Remove scallops from pan and place on a plate in barely warm oven to keep warm until ready to serve.
  6. Toss with parsley and lemon juice and optional parmesan
