Nicoise Salad 3 Ways

Ingredients

    Original Version
  • 3/4 pound green beans, trimmed and snapped in half (I prefer hericot verts)
  • 2 5-6 oz cans tuna in oil, drained
  • 1/4 cup black olives, sliced or 3/4 cup whole, drained
  • 2 Roma Tomatoes, quartered, (or any tomato, cherry tomatoes work well too)
  • 1/4 medium red onion, thinly sliced
  • Potato Version
  • 1 pound tiny red or yukon gold potatoes, (if not tiny, cut into 1" cubes)
  • Great Northern Bean Version
  • 1-2 cans drained Great Northern or Cannellini Beans, Drained
  • For the Dressing
  • 1/2 Cup extra-virgin olive oil
  • 1/4 cup red-wine vinegar
  • 1 teaspoon dried thyme
  • 1 Tablespoon chopped fresh thyme
  • To Serve
  • 4 large hard-cooked eggs, peeled and quartered

Instructions

    Original Version
  1. Place green beans, 1/3 cup water and a large pinch of salt in a medium skillet. Cover, turn heat on high, and bring water to boil. Once beans start to steam, set timer and cook until tender-crisp, about 5 minutes.
  2. Drain and transfer to paper towels to cool.
  3. Combine the tuna, green beans, olives, tomatoes and onion in a medium bowl.
  4. Add Dressing and gently stir to combine.
  5. Plate and add eggs prior to serving
  6. For the Potato Version
  7. Set the potatoes in a large cover them with cold water by a couple of inches, stir in 2 Tbs. salt, and bring to a boil.
  8. Reduce the heat to a gentle simmer, cover, and cook until the potatoes are tender when pierced with a fork, about 10 to 12 minutes.
  9. Stir in the green beans and cook until they turn bright green and tender, about 3 to 4 minutes. Drain well and cool under running water.
  10. Mix the Dressing ingredients in a jar and shake well
  11. Combine the tuna, green beans, potatoes, olives, tomatoes and onion in a medium bowl.
  12. Add Dressing and gently stir to combine.
  13. Plate and add eggs prior to serving
  14. Great Northern Bean Version
