Sunday – Roasted Chicken with your favorite Sides.  Leftover Alert:  Roast extra and for Siberian Tostadas later in the week. Freeze the rest.

Monday –  My Rockin Meatloaf, with Garlic Mashed Potatoes and Green Beans done your favorite way.
Leftover Alert:  Don’t skimp on the mashed potatoes, we will use them later in the week, hold back 2 cups to save a little time.

Tuesday – Brunch night – Gluten Free Greek Breakfast Casserole – An easy one dish meal packed with flavor.

Wednesday – Siberian Tostadas with a side of beans or rice. This is a good flavor profile you can have some fun with.  Use any “shell”..  Tortilla chips for nacho style, or taco shells if that is what you have on hand.  You can even skip the shell and layer it on a bed of rice, or polenta.

Thursday – Chili with all the fixins

Friday –  Gluten Free Gumbo served over rice, with Chile Garlic Lime Corn on the Cob

Saturday –  Baked Chicken Parmesan, with gluten free Fettuccine Alfredo, and a Warm Spinach Salad
