Gluten Free Tuna Melts

Ingredients

  • 8 Slices Gluten Free Bread, Like Udi's White Bread
  • 4 Slices Sharp Cheddar Cheese
  • Butter or Oil for Grilling
  • For the Tuna Salad
  • 2 cans of tuna (I prefer Italian Tuna in Olive Oil, slightly drained)
  • 2 boiled eggs, chopped
  • 1/4 cup finely chopped celery
  • 2 tablespoons dill relish
  • 2 tablespoons finely chopped red onion
  • 1/4 - 1/2 cup mayonnaise
  • salt and pepper to taste

Instructions

  1. Prepare the Tuna Salad and refrigerate at least 30 minutes if you have the time.
  2. Spread the Tuna Salad on one slice of bread, top with the cheddar cheese and the second slice of bread.
  3. Melt Butter on a griddle or large skillet over medium high heat
  4. Grill/Toast the sandwiches on each side until brown, warm and the cheese is melted.
