Gluten Free Shrimp Alfredo

Ingredients

  • 12 ounces gluten free pasta
  • 1/4 cup butter
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 pound small to medium shrimp, peeled and deveined
  • 2 cups of my Alfredo Sauce
  • 1/2 teaspoon cayenne pepper, or more to taste
  • Salt and pepper to taste
  • 1/4 cup finely chopped parsley

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add pasta and cook for 8 to 10 minutes or until al dente then drain.
  3. Meanwhile, melt butter together with the olive oil in a saucepan over medium heat.
  4. Stir in garlic, and cook over medium-high heat until soft, about 3 minutes
  5. Stir in the shrimp, and cook until firm and pink, this will vary depending on the size.
  6. Add Alfredo Sauce, then drained pasta, bring to a simmer stirring constantly.
  7. Season to taste with cayenne or red pepper flakes, and salt and pepper to taste
  8. stir in parsley, and serve
