Cobb Salad

Ingredients

  • 2-3 cups sliced or chopped cooked chicken
  • 4 large boiled eggs, sliced or chopped
  • 4-8 sliced bacon, or turkey bacon, chopped into 1/2-inch pieces
  • 6 cups chopped hearts romaine lettuce
  • 1-2 Tablespoon lemon juice
  • 2 ripe avocados, diced
  • 2 vine ripe tomatoes, seeded and diced
  • 1 red onion, chopped
  • 1-2 cups crumbled Gluten Free Blue cheese, or white cheddar or Monterey Jack, shredded

Instructions

  1. Brown chopped bacon in a skillet over medium high heat. Drain bacon on paper towels.
  2. Chop lettuce and place in a large serving platter or salad bowl.
  3. Toss diced avocados with juice of 1/2 lemon, to retard browning.
  4. To serve, layer lettuce, chopped chicken, chopped hard boiled egg, crisp bacon bits, diced avocado, diced tomato, chopped red onion and shredded cheese on top.
  5. Dress with Red Wine Dijon Vinaigrette.
