With Valentine’s Day approaching, I am always reminded that there is a 71% chance that it will fall during the week…  Why is this a problem.. Time!  It can be hard to find the time to prepare a Valentines Day dessert. Whether you want to share gluten free indulgences with your Love, your children, or a good friend, I have four ways to make it fun and special using Udi’s Gluten Free Chocolate Muffins.

 

Quick, Easy and a Little Cheesy!

Udi’s Chocolate Muffins coated with Vanilla Frosting,  then drizzled with a Chocolate Desert Shell (the kind for ice cream, I use Smucker’s) then topped with a cute Valentine’s Cupcake Pick.   You can find these Red Heart Picks at Etsy and Michaels, and most grocery stores.

 

 

Simply Perfection

Dress up your Udi’s Chocolate Muffins with your favorite chocolate glaze.   I always have pantry items on hand to whip one up if needed.  I have warmed my muffins before glazing them.

3/4 cup semisweet chocolate chips
3 tablespoons butter
1 tablespoon light corn syrup
1/4 teaspoon vanilla extract

 In a double boiler over hot, but not boiling water, combine chocolate chips, butter, and corn syrup. Stir until chips are melted and mixture is smooth, then add vanilla.   Spread warm glaze over top of muffins, letting it drizzle down the sides.  YUM!

 

Berry Elegant..

A warmed, Udi’s Chocolate Muffin, topped with warm chocolate syrup and dressed up with fresh raspberries, Smucker’s Raspberry Sundae Syrup, and Sprinkled with a little powdered sugar, and finally garnished with a mint leaf.  If you prefer strawberries, go for it!  I would probably sweeten them and refrigerate then for an hour or so before preparation.  They tend to be a little lacking in flavor this time of year.

 

Get Down to Business  😉

Do you sometimes feel like Valentine’s ideas are a little too “girly” for your guy?  Me too.   Layer up an individual size trifle dish with a warmed, Udi’s Gluten Free Chocolate Muffin cut in half.  Or you can double or triple the process in a larger dish and have a “Down to Business” Trifle you both can share.
Layer 1.   Bottom of Muffin.
Layer 2.  My Chocolate Glaze above.
Layer 3.  Whipped Cream.
Repeat all three layers again and top with chopped nuts or shaved chocolate.
