Ingredients

2 cups Gluten Free rolled oats
1/4 cup sucanat or maple sugar
1/2 cup raisins
1/4 cup toasted almonds or any toasted nuts you like
1 tablespoon ground cinnamon
1/8 teaspoon ground ginger
1/4 cup safflower or grapeseed oil, or any light oil, just not olive
1-2 tablespoons honey
1/2 teaspoon vanilla extract

Directions

Preheat the oven to 350 degrees. Combine the oats, sugar, raisins, nuts, cinnamon and ginger in a large mixing bowl and set aside. In a separate bowl, stir together the oil, honey, and vanilla. Add the wet mixture to the dry mixture stirring with a wooden spoon until well blended.

Spread the mixture in a thin layer on a large baking sheet and bake 30×35 minutes, until lightly browned. Stir and pat down at the 10 and 20 minute marks. Scrape the granola onto a clean baking sheet and set aside to cool. Makes about 3 cups.
