A super easy and tasty tart that uses your favorite berries.

Gluten Free Any Berry Tart


  • For the Tart Crust
  • 8 ounces of Gluten Free Gingersnaps
  • Pinch of salt
  • 1/4 cup honey or 3 Tablespoons agave nectar
  • 1 Tablespoon melted "butter"
  • For the topping
  • 8 ounces cream cheese, (or substitute) softened
  • 1 Tablespoon lemon juice
  • 1/2 cup sugar, divided in half
  • 4 cups fresh berries
  • 1 Tablespoon lemon juice
  • 1/2 cup water
  • 1 1/2 tbsp cornstarch or tapioca flour


  1. Preheat oven to 325 degrees.
  2. Place gingersnaps and salt in food processor and pulse until crushed.
  3. Stir in honey/agave and melted butter.
  4. Press crumbs into a 9-inch pie plate or tart tin.
  5. Bake at 325 degrees for 10 minutes. Remove from oven.
  6. Using an electric hand mixer beat cream cheese, lemon juice and 1/4 cup sugar.
  7. Spread thinly on cooled crust.
  8. Place 1 cup berries in a small saucepan with lemon juice and water.
  9. Bring to a simmer.
  10. Combine cornstarch and remaining 1/4 cup sugar, then stir into saucepan.
  11. Cook for 2 minutes.
  12. Remove saucepan from heat.
  13. Stir in remaining berries.
  14. Spoon on top of cream cheese.
