I have made this off and on for years.  It is one of those accidental creations.  It is good anywhere you would have tuna or chicken salad.

Gluten Free Chickpea Salad

Ingredients

  • 1 (15-ounce) can no-salt added chickpeas, rinsed and drained (garbonzo beans)
  • 1/4 cup finely chopped celery
  • 2 tablespoons dill relish
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons mayonnaise
  • salt and pepper to taste

Instructions

  1. Pulse the chickpeas in bowl of a food processor until coarsely chopped.
  2. Transfer to a medium bowl and add celery, relish, red onion, and mayo or veganaisse.
  3. Stir until well combined. Season with pepper and chill until ready to serve.
