A fresh Mexican Pizza with that can easily be made vegetarian or vegan.

Gluten Free Mexican Pizza


  • 1 Tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 green bell pepper, cut into thin strips
  • 8 ounces lean ground beef, chicken or turkey (or a ground vegan option)
  • 1 tablespoon of my taco seasoning
  • One 14.5-ounce can fire-roasted tomatoes
  • 2 Gluten Free Pizza Crusts, I like Udi's. or one homemade or mix crust like Bob's Red Mill.
  • 1 cup shredded 4-cheese Mexican blend
  • 1/4 cup chopped fresh cilantro


  1. Preheat oven to 450 degrees.
  2. Heat the oil in large nonstick skillet over medium-high heat.
  3. Add the garlic, onions and bell peppers and cook, stirring occasionally, until tender, about 8 minutes.
  4. Add the ground beef, taco seasoning and cook, breaking up the beef with a wooden spoon, until the beef begins to brown, about 8 minutes.
  5. Add the tomatoes and bring to a boil. Reduce the heat and simmer, stirring occasionally, until the sauce begins to thicken and the flavors are blended, about 10 minutes.
  6. Remove from the heat. Let cool slightly.
  7. Spoon the beef mixture onto the crusts then top with the cheese.
  8. Bake until the filling is hot and the crust is crisp, 12 to 15 minutes.
  9. Sprinkle with the cilantro and cut into slices.

    Gluten free food helps arthritis suffers. It doesn’t cause inflammation in the joints.
