This dish does not always have to be a snack or something you take to a potluck.   It is a meal in itself.   A salad even!   A great go to if you are looking for a vegetarian meal that really satisfies.  Just go easy on the chips!  I like to pile it on toasted corn tortillas, like a tostada, then I don’t have to worry about how many chips I nosh on! It is also great on top of  steamed rice.

For my salad version, I omit the lettuce from the layer process.  I place a big portion of lettuce in a large bowl and top with a couple big spoon fulls of the layer dip, and give it a little drizzle of my Texican Vinaigrette.

Seven Layer Dip

Ingredients

  • 2 Tablespoon of my taco seasoning
  • 2 cans refried beans
  • 1 8oz package cream cheese, softened
  • 1 16oz container sour cream
  • 1 16oz jar salsa, or 2 cups
  • 1 large tomato, chopped
  • 1 green bell pepper, chopped
  • 1 bunch chopped green onions
  • Lettuce, torn or shredded
  • 1 (6 ounce) can sliced black olives, drained
  • 2 cups shredded Cheddar cheese

Instructions

  1. In a medium bowl, blend the taco seasoning mix and refried beans.
  2. Spread the mixture into a large dish
  3. Mix the sour cream and cream cheese in a medium bowl.
  4. Spread over the refried beans.
  5. Add a layer of salsa, followed by a layer of tomato, green bell pepper, green onions and lettuce.
  6. Top with Cheddar cheese.
  7. Garnish with black olives.

    What brand of canned gluten-free refried beans do you use? So many have soy &”seasonings” & not labeled gluten-free, I’ve taken to making fresh homemade beans every week.

      Homemade is the best and cheapest. I make a big batch of beans and freeze them, thaw when needed. When I buy beans I lean towards the Whole Foods brand, Bearitos, and my local Texas grocer’s natural brand, Central Market. They are all organic, and read simple ingredients.

    This is tagged vegan, but is totally not vegan with all that cream cheese and cheese. It can be made vegan with soy cream cheese(icky) and Daiya vegan cheese.
