Now don’t get me started on chili…  I have several chili recipes, for beef and turkey, for game, no beans, etc.  This is a meat and bean chili with that really well rounded flavor that hits most people’s liking.  It is also not “specific” as in, great with some sides, but not others.  So go for it!

Gluten Free Meat and Bean Chili

  • 1 lb ground beef or dark blend turkey
  • 1 onion, finely diced
  • 1 small can tomato paste
  • 1 29oz can tomato sauce (or 2 regular cans)

  • 1 can kidney beans with liquid
  • 1 can pinto beans with liquid
  • 1 4oz can diced green chiles
  • 2 tablespoons finely chopped celery
  • 1 1/2 Tablespoons chili powder
  • 1 teaspoons cumin powder
  • 1/2 to 1 teaspoon black pepper
  • 1/2 to 1 teaspoon salt

  • Garnish Ideas

  1. Brown the ground beef in a large stock pot over medium heat, stirring to crumble.
  2. Add all the remaining ingredients.
  3. Bring up to a simmer over medium heat (you can go hotter if you have a HEAVY pot and can tend to it)
  4. Turn heat down to maintain simmer and cook for 2-3 hours partially vented.
  5. Stir every 15 minutes
  6. Serve with your favorite garnish or side
