This is my basic chicken stew that can go chowder in the blink of an eye!  Feel free to add drained or frozen corn, or hominy and you can even stir in a cup of heavy cream at the end.

Chicken and Potato Stew

Ingredients

  • 4 cups chicken stock
  • 2 cups water
  • 2 pounds potatoes cut into 1 - 1 1/2 cuts
  • 3 carrots (about 1 1/2 cups) sliced
  • 3 ribs of celery (about 1 1/2 cups) sliced
  • 2 cloves garlic, minced. or 1 teaspoon garlic powder.
  • 3 cups chopped or shredded chicken
  • 1 small box chopped spinach, drained and squeezed very well

Instructions

  1. Add stock and water to a 5 quart pot add the stock, water and potatoes.
  2. When it comes to a boil, add the carrots, celery and garlic
  3. Simmer for 5 - 10 minutes
  4. Add Chicken, bring back up to heat and simmer for 5-10 minutes
  5. Add spinach and simmer for 3-5 until hot all the way through.
