Sunday 1/1 –  Happy New Year!  I hope you have a wonderful day and Blessed New Year.
Roasted Chicken , mashed sweet potatoes,  and Black Eyed Peas.
Hint: Roast 2 chickens and reserve 2-3 cups pulled chicken for a recipe later in the week, freeze the rest)

Monday 1/2 – Spaghetti Night – Your Favorite Gluten Free Spaghetti, I love Jovial Brown Rice Spaghetti!  with Asiago Cheese Bread.

Tuesday 1/3  – Fajita Bowls with all the fixings and Rice and Vaquero Beans.

Wednesday 1/4– Chicken Potato Stew with a salad if you like, or just dive in!  I am a soup purist, most of mine are meals in themselves.  =)

Thursday 1/5 –  Glazed Salmon with Roasted Cauliflower or other vegetable, and Mushroom Rice.   Grill, Broil or Pan Sear Salmon and top with a warm glaze consisting of equal parts of my Barbecue Sauce and your favorite preserves.  I generally will use either apricot or raspberry.  This also works with a bottled Gluten Free Smokey Barbecue Sauce,  (Annie’s is a good one) I will generally thin the sauce a bit with water or butter, then mix with the preserves.

Friday 1/6 –  Flex night.  Play with a recipe of your own, pick a go to, or go out!

Saturday 1/7 –   Ropa Vieja with Black Beans and Rice, Served up in buns or along side cornbread and pintos.
