Beef and Mushroom Stew

Ingredients

  • 1 pound cubed beef stew meat
  • 1 tablespoon vegetable oil
  • 2 cups water
  • 2 tablespoons margarine
  • 2-3 large carrots, diced
  • 3 cloves garlic, minced or about 1 1/2 teaspoons garlic powder
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 pound fresh mushrooms, sliced
  • 3 cups water
  • 3 cups beef stock
  • 2 teaspoons oregano
  • salt and pepper to taste

Instructions

  1. Brown the cubes of stew meat in vegetable oil over medium heat until juices become a rich brown color.
  2. Add 2 cups water, and simmer meat while preparing the vegetables.
  3. In a large soup pot, melt butter or margarine over medium heat. Saute carrots, onion, garlic, celery, and mushrooms.
  4. Add meat, 3 cups water, 3 cups stock, and oregano to vegetable mixture.
  5. Simmer about 20 minutes
  6. Adjust liquid and seasoning as desired. Serve immediately.
