    My suggestion is this:
    Since I found out a year and half ago that I have Celiac Disease I try very hard to think “what can I eat” instead of all the things I can no longer eat. It helps me remember that this is not the worst thing in the world and I am very lucky.

You can’t imagine the looks on their faces when they have been eating such a limited diet and you tell them “yes, you can eat fried chicken!!” Which was out of this world by the way!     I have struggled most of my life with Endometriosis, Fibromyalgia and Rheumatoid Arthritis. I have finally decided to take charge of my own life, as after too many doctors telling me “it’s all in my head”. “You bloat because of your age, its normal for women to add weight, blah, blah, blah”. 7 doctors later, I was finally diagnosed with reaccuring Endometriosis and Acute Fibromyalgia and Chronic Fatigue. I have started avoiding “wheat”.. its been challenging trying to find recipes that “taste” as they should after removing glutens. I am so delighted to find your site.. thank you for all the wonderful choices. My husband has been so supportive with all the new changes. He suffers with psoriasis, I feel these changes will help him as well. Thank you, Thank you. :)

    Having two young girls with Celiac Disease has had some challenges outside of the home, but I try my best to plan ahead and make them GF alternatives for every occasion! It may seem difficult at first, but to see those smiles and hear, “Thanks Mommy!” makes it all worth it!

    Thanks for sharing such a bounty with us!! Hope you’re having a wonderful Birthday time m’dear. Here’s my entry for the contest and here’s a tip. I love using Chex gluten free cereals to add some CRUNCH to chicken and fish and pork chops. You can also spice things up by using the cinnamon flavor or add some extra spices to the honey flavor. I’ve used it as a crunchy topping on my gluten free mac and dairy free cheese. I also add Mrs Lepers Corn Spaghetti to home made chicken soup for my noodle. It holds up well and soaks in the flavor nicely.

    While I’m only gf, my son is forced to be a gf vegan. Seems as he removed layers of his diet, starting with gluten then dairy, it became apparent he also has a meat allergy.     Happy birthday! I have a December birthday too… Christmas Eve… so, with all the hustle and bustle of the holiday season, it takes a different perspective to celebrate our birthdays. What a generous thing to have a contest in honor of your birthday!

    I have recently found out that I am allergic to wheat, so I’ve spent the last two months learning how to cook gluten-free and trying not to break the budget. Thanks for the menu ideas… my husband and I have enjoyed eating the recipes and not feeling “deprived.” :)

We have a new baby on the way, and I become gluten free once it is born to protect the child’s health through breastfeeding for at least a year (I did 15 months with our first child). Keep up the great work!

    I have been gluten free for a year and found out women with Polycystic Ovarian Syndrome that 85% of them have gluten intolerance. I am a founder of PCOS Support group called Cysters Unite, and have been encouraging all of them to go gf. 95% of the women that went gluten free have been able to have return fertility, a new life, and are able to be a better person because of just going gluten free.

    I recommend Christine Davis’s “Irresistibly Gluten Free” to all the girls have gone gf in my support group. As it has been a life saver. Now I have this site to check out as well. Keep coming gf resources!

    BTW, Happy Birthday! My Birthday is the day after Christmas so I am fully aware of December birthdays.

    Oh God Bless You and all of us who have this condition. Genuine & generous of you to think of others on your birthday. As you know it gets frustrating dealing with the symtoms as well as managing a strict diet. After 8 years of Lupus diagnosis plus too many other “diseases” the Rheumy decided to diagnosis me with, all the while watching me come to his office countless times in horrible pain and depression, I could no longer take care of myself. That brought me back to living with family. It was a blessing b/c I had to leave the state the doctor was in and to Indiana w/family where I found an actual Rheumatologist that diagnosed me with Celiac!! This explained SO many things I had gone through physically that had me feelling like I was a freak b/c the previous doctor ignored so many things. This new Doctor saw how miserable I was at the age of 39, and not living at all. Praising God that He brought me through this and I WILL FIGHT TO LIVE AGAIN!!! Thank you and Happy Birthday and God Bless everyone that has contributed to your overall mission!!

    I love the GF meal planner! We have tried many of the recipes & really enjoy them. I also purchase Udi’s bagels & GF bread, also tried the GF granola recently in my morning yogurt.     Was diagnosed with Celiac Sprue 15 years ago at the age of 46. Have been gluten free ever since and found that I am highly sensitive to gluten where as much as a host at church can send my system into a tailspin for a good two weeks. I look at recipes and try to figure out how I can convert it to gluten free while still retaining the flavor and textures you want and love.
