Gluten Free Southwest Chicken/Turkey Chowder

Ingredients

  • 1 qt broth
  • 2 cups water
  • 2 cups diced potatoes, (or use mashed potatoes or baked, it will just be creamier/smoother)
  • 3 cups chopped turkey or chicken
  • 1 can corn or hominy drained
  • 1 can of diced tomatoes and chiles (like Rotel)
  • 1 teaspoon of my taco seasoning
  • 1/2 teaspoon garlic powder
  • 1 diced jalapeno
  • 1/2 cup heavy cream (optional)
  • 2 cups Monterrey Jack Cheese (optional)
  • Cilantro (optional)

Instructions

  1. In a large pot or dutch oven bring the broth, water, and potatoes to a boil.
  2. If using mashed or baked, reserve them for later in the recipe
  3. Reduce heat to low, cover, and simmer for 5 minutes.
  4. Add the chicken, corn/hominy, "Rotel", jalapeno and spices
  5. Simmer for 5-10 minutes.
  6. Stir in cream and cheese stirring frequently, until the cheese is just melted, and serve.
  7. Garnish with cilantro if desired.
