I love broccoli and mushrooms together in almost anything, this is a great personal size frittata.

Broccoli and Mushroom Personal Frittatas


  • 2 Tablespoons oil or butter
  • 1 lb mushrooms, thinly sliced
  • 2 cups broccoli florets, steamed
  • 2 Tablespoons olive oil
  • 6 oz swiss cheese grated
  • 9 eggs
  • 1/4 cup milk of choice or water
  • salt and pepper


  1. Preheat the oven to 350 degrees
  2. Grease cupcake tin with oil, butter or spray
  3. In a large skillet over medium high heat, melt the butter
  4. Add the mushrooms and saute until they are browned and getting crispy on the ends. about 10-15 minutes.
  5. Transfer to a food processor or blender and process until chopped. *or you may finely chop the mushrooms.
  6. Place the florets in a steamer and steam until tender, 5-7 minutes.
  7. Remove and place them in a large mixing bowl.
  8. Add the olive oil and mash the broccoli until chunky, then add the mushrooms and cheese. Season with a little salt and pepper.
  9. Mix well.
  10. Fill the cupcake tins half full with the mushrooms and broccoli mixture
  11. Back in your bowl, beat the eggs with a splash of water or milk of choice, until light and fluffy. Season with salt and pepper and pour over the mushrooms and broccoli mixture, to about 3/4 full.
  12. Bake the cupcakes for approximately 10 minutes or until set. serve immediately or store in the refrigerator or freezer.

    Can I prepare everything (but baking them) the night before..like either have the mixture ready (covered in the bowl) and just give a little stir in the morning and THEN bake them or even put them in the cupcake tins the night before and just pop them in the oven in the morning or do you not recommend this?

      hi, yes, certainly. I recommend refrigerating them in the bowl, so that the pan is not so cold at the time you bake them. or you could set it out for a while to “warm” up… just as long as that pan is not too chilly.
