Gluten Free Salmon Croquettes

Ingredients

  • 2-3 Tablespoons Oil
  • 2 6 oz packs Wild Pink Salmon
  • 1-2 baked potatoes (will use 1 1/2 cup)
  • 1/3 cup mayonnaise
  • 2 eggs beaten
  • 2 Tablespoons Lemon Juice
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped red bell pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup gluten free flour (rice or all purpose with or without baking powder)

Instructions

  1. In a medium bowl combine all ingredients except flour
  2. Separate into 8 balls and make 8 patties, if it does not hold, add a little flour
  3. Pour remaining flour into a small dish
  4. Dredge each side of the patty in the flour
  5. Heat the oil in a large skillet or fry pan over medium heat
  6. Cook/Fry the patties in batches of 3-4 until browned on each side
