Sunday 11/13 – My Rockin Meatloaf, with Garlic Mashed Potatoes and Green Beans done your favorite way.
Leftover Alert:  Don’t skimp on the mashed potatoes, we will use them later in the week, hold back 2 cups to save a little time.

Monday 11/14 –  Chicken Fried Rice with Asian Slaw and Sesame Sugar Toasts
Leftover Alert:  You can make extra (plain) rice for Wednesday to save a little time

Tuesday 11/15 – Shrimp and Potato Croquettes, with steamed vegetables, and a baby greens salad topped with a lemony vinaigrette.
Leftover Alert:   Substitute 2 cups leftover mashed potatoes for the baked potatoes, omit the milk/liquid and add enough to make it bind, just a tablespoon at a time.

Wednesday 11/16 – Fajita Bowls with all the fixings and Rice and Vaquero Beans.
Leftover Alert: Make enough fajita meat to have 1/3-1/2 cup per person for Friday Night. In low wide bowls, layer rice beans Fajitas and top with all the fixings.

Thursday 11/17 – Baked Chicken Parmesan, with Garlic Green Beans and gluten free Fettuccine Alfredo

Friday 11/18 –  Pizza Night!  –  Fajita Pizzas Using your favorite pizza crust, homemade, store bought, on bagels, on toast.. what ever you like!
Add 1 teaspoon of my taco seasoning per 2 cups marinara sauce.  Spread on crusts, sprinkle with a half and half blend of mozzarella and monterey jack, top with slightly warmed fajita  meat, thinly slices onions and peppers (or leftovers, they will be sooo yummy!) and cook until according to package instructions or until cheese is melted and bubbly and crust begins to crisp. (about 10 minutes)
