Baked Potato Soup

Ingredients

  • 5 lbs potatoes peeled and cubed,
  • 2 leeks minced
  • 3 cloves of garlic minced
  • 1 lb bacon cubed
  • 4 to 5 cups of chicken stock
  • 2 cups heavy cream
  • 3 cups cheddar cheese.
  • Sour cream and green onions for garnish.

Instructions

  1. Saute bacon and remove from pot.
  2. Remove most of the bacon grease add leeks and garlic and saute them.
  3. Add potatoes and stock cook until tender.
  4. Blend with blender add more stock and cream return to heat.
  5. Add cheese and season to taste.
  6. Garnish with sour cream, green onions, and bacon bits.
