This is a quick easy Hollandaise Sauce I have made for years.

Hollandaise Sauce


  • 4 egg yolks
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 cup unsalted butter, melted (1 stick)
  • 1/4 teaspoon dijon (I just dip a knife in, coating about an inch of it and scrape into the mix.)
  • Pinch cayenne or a couple drops hot sauce
  • Pinch salt


  1. In a small processor, or a bowl using an immersion blender, (if making a big batch, you can use a blender) combine the egg yolks, mustard, lemon juice and hot pepper/sauce. Blend for about 5 seconds.
  2. Melt butter over low heat or in the microwave.
  3. With the processor/blender running, add in the butter in just a thin stream, until it is all blended and beginning to thicken. (about 15 seconds)
  4. Serve immediately or keep warm by placing in a dish, and resting in a warm bowl of water. (I often make this in a glass 2 cup measuring cup, with an immersion blender, if I need it to keep, I place the measuring cup it self in the warm water)
