I created these cookies because I have been craving spice cake, but I did not really want to make a cake.  The Coconut Flour provides a soft, cakey cookie that almost melts in your mouth.

Gluten Free Coconut Flour Spice Cookies


Preparation Time: 15 minutes

Cook Time: 12 minutes

Total Time: 27 minutes

Coconut flour is very dense. I loosen it in the bag a bit then spoon into my measuring cup, so it is not packed.


  • 3/4 cup coconut flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup sugar
  • 1/2 cup butter (melted), or coconut oil
  • 4 eggs
  • 3/4 teaspoon vanilla


  1. Preheat Oven to 350 degrees (for cakey cookies) or 375 degrees for firmer cookies
  2. Combine the first seven dry ingredients in a small bowl and set aside.
  3. Combine the sugar, eggs, and vanilla with a mixer or by hand.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Let mixture rest about 4-5 minutes, it will thicken a little.
  6. Scoop (I used a 1oz scoop) or transfer by spoonfuls to a lined cookie sheet
  7. Bake 12-14 minutes, remove from oven and transfer to a cooling rack. Makes 24 Cookies

    I wonder if I can substitute Egg Beaters for at least part of the eggs. I need to cut fat as well as gluten since having gall bladder surgery recently! These sound wonderful and I do plan to make them.
