Basic Veggie Frittata

Ingredients

  • 3 c of chopped, sauted or steamed vegetables (your choice)
  • 1 T Oil if desired.
  • 3 eggs beaten
  • 3 egg whites beaten
  • 2-3 T of feta or Parmesan cheese, or a DF Substitute
  • salt and pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Place 3 cups of sauteed vegetables to large nonstick (with ovenproof handle) pan over medium heat. Use your favorite. I like to use onions, spinach, broccoli, and tomatoes. You can use pre-sauteed, roasted or steamed vegetables.
  3. Add the eggs (beaten) with salt and pepper to vegetable mixture.
  4. Move mixture around until slightly solidified.
  5. Transfer pan (with ovenproof handle) to oven.
  6. Bake until frittata is almost firm to the touch.
  7. Sprinkle with feta or Parmesan cheese and bake until firm.
